banana muffins

I’ve been blogging now for six years here at thecattylife. Prior to this, I was on blogspot, and even dabbled in Xanga in the early 00’s. Wow, that makes me feel old. I’ve always blogged for myself – I say this truthfully, I don’t really write with an audience in mind, I don’t think about SEO here and I certainly don’t propogate my posts through all my social channels. Oh wait, maybe Facebook. And Instagram, but only if there’s a really good photo to go with it.

I don’t think about my blog as ‘helping’ anyone. I post recipes sure, but really it’s a catalogue of my recipes for myself. And well, now it’s therapy for when I need to vent about child-rearing. But when one of my posts actually does help people and for over four years brings comments and emails telling me how wonderfully simple and crazy delicious a recipe is, it does make me smile. And make me proud.

I posted this recipe to my mum’s super easy banana cake back in March 2011. I’ve had constant feedback about this recipe for four years. Four years. The latest comment was only in May this year and you know what? All these people can’t be wrong. It’s a tried and tested recipe that has been passed through my family and I’ve made this time and time again. Like today!

Banana muffins (also adaptable as a cake or loaves)
180 grams sugar
250 grams butter, softened
3 eggs
3-4 medium sized banana, ripe (equivalent of 1 cup mashed)
280 grams plain flour
1 teaspoon baking powder
1 teaspoon baking soda
2 tablespoons condensed milk
Juice of 1 orange (approx 100mL)
  1. Preheat oven to 170°C/340°F.
  2. Beat butter and sugar together until creamy, then add eggs one at a time and continue to beat until mixed.
  3. Mix in flour, baking powder and baking soda until properly combined.
  4. Add condensed milk, orange juice and mashed banana and continue to mix.
  5. Line muffin tray (makes 12 muffins), two loaf tins or one round tin.
  6. Bake in preheated oven for 30 mins (for muffins), 35 minutes (for two loaf tins), or 40 minutes for a round tin. Muffins/cake is cooked when an inserted skewer comes out clean.
Makes 12 muffins.
