It was Thanksgiving in the US yesterday. I started this post wanting to write something about being thankful, but wanted to be… you know, witty, and not corny. But alas, I have run out of wit, I don’t want to be super corny (like, I am thankful for my mum) and will just stick to stating the obvious.

Like, boy, am I thankful for Oreos.

The simple Oreo – a thin layer of cream sandwiched between two chocolate biscuits – so simple right? But can you believe it’s been the best selling cookie in the US since 1912? Well, I didn’t believe it but Wikipedia says it is so, and so it is.

But I digress.

I am also thankful for Instagram, which keeps me aware of what the sky looks like in at least 12 countries every five minutes. Conversely, I am also thankful that people follow me on instagram, despite my 90% food, 10% fashion vanity check every day.

In the same theme, I am thankful for Facebook, where I can see what my friends’ kids look like, and what they look like again five minutes later.

And I am also thankful for WhatsApp, where I get daily photos of my niece, and I do care what she looks like every second of the day.

Basically, I’m thankful for my iPhone.

I am thankful for my job, because despite my scary hours, I like it. And it pays for my eating and my shoe habit and my big fat holiday coming up in FOUR WEEKS FROM TODAY (not that I’m counting). I’ll be thankful for that when it finally arrives.

I am thankful for shellac nail polish, because damned if I chip another nail 10 minutes after a manicure.

I am thankful for skinny ankles. I don’t want cankles. Just saying.

I am thankful for chai lattes, because if they didn’t taste so good, I would be drinking coffee everyday and bouncing so high I’d be plastered to the ceiling.

I am thankful for yoga and pilates, and Lululemon. For those who’ve worn Lululemon, you know what I’m talking about.

I am thankful I have teeth, and good teeth, said my dentist recently, so I can continue to keep eating all the yummies.

And lastly… and maybe I will get corny here… I am thankful for health and love and peace and contentment. I am perfectly where I need to be at this point in my life. And for that, I am thankful.

And you know what you guys are thankful for? A recipe for a fricking easy no bake Oreo cheesecake! It LITERALLY takes 10 minutes to make and it tastes awesome

No bake Oreo cheesecake
200 grams (7 oz) chocolate biscuit (my choice: chocolate digestives)
50 grams (2 oz) butter, melted
500 grams (1 lb) cream cheese
500 grams (1 lb) mascarpone cheese
50 grams (2 oz) caster sugar
2 packs Oreos (original)
Oreos (mini, original or crushed) to decorate
  1. Crush the chocolate biscuit with a pestle and mortar into fine crumbs.
  2. Melt butter and add to biscuit crumbs and mix well.
  3. Press gently over the base of a 20cm (8 inch) round, spring form cake tin. Place in the freezer to set while making the cream cheese mixture.
  4. Crush two packs of Oreos with a pestle and mortar. Don’t make it too fine, you want some chunks. Set aside.
  5. Beat together the cream cheese, mascarpone and sugar. Slowly add in the crushed Oreos and mix either with an electric mixer or just with a wooden spoon.
  6. Spoon the mixture over the biscuit base, smoothing with the back of  a spoon.
  7. Place in refrigerator and chill for an hour.
  8. To serve, loosen the edge of the tin with a knife, then remove the cheesecake from the tin carefully. Top with mini Oreos or any other decoration and serve!
Serves 6-8.
