Ok seriously, waddup with this weather? Firstly we had schizophrenic Friday, which was thundery then sunny then rainy. And then Saturday which was… ok Saturday was nice. But then yesterday! Cold, rainy, windy, 14 degrees… total hibernation weather… in June?

I don’t know what the hell is going on.

But I do know that a good chocolate brownie will just about fix anything.

I usually whip up a batch of brownies using my good ol’ tried and tested recipe. But this time, I thought I’d try Elly’s recipe, which uses muscovado sugar, cinnamon, orange zest and chilli. Except I totally bastardised it because I didn’t use orange (not a big fan of orange and chocolate) and though I had all the intention of adding chilli flakes, I bailed at the last minute because I just wanted good plain chocolate brownies.

They turned out pretty much like mine!

The brownies brightened my very grey weekend Hope y’all had a good one too!

Chocolate brownie (original recipe here)
200 grams dark chocolate, roughly chopped
200 grams butter
3 eggs
250 grams dark muscovado sugar
250 grams caster sugar
250 grams plain flour
1 teaspoon ground cinnamon
a 30 x 20 x 5cm baking tray lined with greaseproof paper
  1. Preheat oven to 180°C/355°F.
  2. Melt the chocolate and the butter in a bowl set over a pan of simmering water, stirring occasionally.
  3. Meanwhile, beat the eggs, both sugars and spices well in a large bowl.
  4. When the chocolate is melted, stir well to combine with the butter then pour this mixture into the egg mix.
  5. Fold in the flour and stir until mixture is just combined.
  6. Pour into a 20cmx30cmx5cm tin (greased and lined) and bake for 35 minutes.
Makes about 12 portions
