Oh my God, honey joys. Does anyone even remember these things? I’m pretty sure that finding the recipe for honey joys on the side of a Kelloggs Cornflakes box resulted in my maiden foray into baking. It doesn’t get any simpler than this: butter, sugar, honey, cornflakes. And the results are seriously delicious.

I hadn’t made honey joys in probably 20 years. But walking down the cereal aisle the other day looking for inspiration to alleviate the boredom of my two-weetbix breakfast every day, I saw Kelloggs Cornflakes. I hadn’t had them in forever! So I bought a box, took them home, and basically used 3/4 of the box making honey joys instead haha.

But it was worth it. The nostalgia! We used to have these all the time, at every birthday party, every get together with family and friends. And now that I’ve brought it back into my sphere of conscience, I’m going to be making them more often!

Honey joys
90 grams butter or margarine
1/3 cup sugar
1 Tbsp honey
4 cups Kelloggs Cornflakes
  1. Preheat oven to 150°C/300°F.
  2. Melt butter, sugar and honey together in a saucepan until frothy. Add cornflakes and mix well.
  3. Line a 24 cupcake tray and working quickly, scoop spoonfuls of cornflake mix into the cups.
  4. Bake for 10 minutes.
  5. Let cool for the honey to set before serving.
